What is a good ATS score and what should I aim for?

The 70 to 80 range will pass for moderately selective filters but loses you points against tighter ones. Below 60 is the danger zone — the resume is probably being filtered out before a human sees it. Scores are role-specific: a resume that scores 90 on one JD might score 65 on another, which is the whole point of checking it against the actual job you are applying to.
